Atlantic Salmon & Cilantro Potato Salad

Ingredients

  • 1 Can LiveOcean canned salmon drained and flaked
  • 1/4 Cup Fresh cilantro finely chopped
  • 1 tsp Garlic minced
  • 1 1/2 Cups Light mayonnaise
  • 1/3 Cup Red onion diced
  • 1/3 Cup Celery diced
  • 2 1/2 Lbs Potatoes, skin on cooked, quartered, cooled
  • 1 tsp Pepper
  • 1/2 tsp Salt

Instructions

  1. Quarter the potatoes, place in a pan, and cook until fork tender

  2. Drain and flake the salmon. Set aside

  3. Place remaining ingredients in a large bowl.   Mix until thoroughly blended

  4. Add cool potatoes and salmon.  Fold in gently until fully incorporated 

  5. Serve and enjoy!
